Teochew Braised Duck



Ingredients :

1 (about 2 kg) duck

6 cloves shallots

6 tbsp sugar

1 star annise

10g cinnamon

3 cloves

2 cardamoms

25g galangal

6 cloves garlic with skin

1 litre water




Marinade :

1 tbsp salt

4 tbsp light soy sauce

4 tbsp dark soy sauce

2 tbsp oyster sauce

1/2 tsp five spice powder



Method :

1. rinse duck, mix well with marinade n set aside for 2 hrs. peel shallots

and flatten with knife.



2. heat up wok, fry sugar till caramelises, add duck and mix well



3. put shallots, star annise, cinnamon , cloves, cardamoms, galangal

garlic and water in pot. braise till duck is cooked.



( may add tau kwa n boiled eggs )
