Fried Beef Slice with Egg


Ingredient
Beef Slice - marinate with soya sauce, dark soya sauce, sugar, pepper, corn flour, sesame oil
Egg - beaten with salt, fish sauce, hao chi seasoning, sugar , oil, corn flour

Method
Stir fry the beef in hot oil - dish
After beef cooled down a bit, add to beaten egg
Heat pan and add in egg mixture
Fast fry and dish up




Pan Fried Pork Chops

Ingredients
Pork Shoulder Chops with a bit of fat

Seasoning
Black Pepper
Fish Sauce
Vinegar
Corn Flour
Shao Xing Wine

Method
Massage all seasoning to pork and best marinate overnight
Pan fry on both sides
Serve with rice

Braised Tofu with Roast Pork





Ingredients
Roast Pork
Tau Kwa - Pan fried after sprinkled with a bit of salt - set aside
garlic
shallots
ginger

Seasoning
1 tsp oyster sauce
XO sauce
sugar
sesame oil
ground bean paste
1/2 cup water
corn flour mix with water - for thickening

Method
Fry shallots, ginger and garlic and add in roast pork and
bean paste plus xo sauce.
Add water and bring to boil til roast pork softens
Put back tofu and add all rest of the seasoning
until water has been reduced to half. add thickening


Steam Belly Pork Slice with Bean Paste

Ingredients
Belly Pork - Siced thinly
Garlic - finely chopped


Seasoning
2 tsp hot bean paste
sugar
cornstarch
water
chinese wine

Method
Mix everything well and leave to marinate for a few hours
Steam on high heat for 10-15 mins
Serve hot with rice

Korean Seasoned and Simmered Chicken


Ingredients
Whole Chicken - about 800g cleaned and cut - rub with lime juice for a while and rinse
Big onions
Carrot
Potatoes
Leek and green chilli slice (optional)

Seasoning - combine and mix well
light sauce
crushed garlic
hot chilli paste - 1 tbsp
chilli powder - 2 tbsp
Ginger juice - 1 tbsp
ground black pepper
sugar
sesame oil

Method
Heat oil and brown onions - dish and set aside
Heat oil and brown chicken til golden
Pour in Half the seasoning and cook till boil - abt 7 mins
add carrot and potato and onion plus remaining seasoning
Cook tilll chicken is tender but vegetables are not mushy
Lower heat and simmer for 20 mins
Garnish with leek and green chilli

Tau Kwa Minced Meat Prawn Patty


Ingredients
1 Tau Kwa
Mince Meat
Chopped carrot
Coriander - chopped
Diced Prawn
1 egg

Seasoning
Salt
Sugar
Soya Sauce
Pepper
Corn Flour
Hao Chi Seasoning powder
Curry Power

Method
Mash the tau kwa with some salt
Add in the rest and seasoning
Roll into small patties and pain fry
